Ingredients:
4 ripe peaches
1 pack halloumi
5 tbsp St. Lawrence Gold maple syrup (divided into two portions: 4 tbsp for brushing, 1 tbsp for finishing drizzle)
1 chilli
Small bunch of mint

Preheat oven to 180°C | Gas Mark 4 | Fan Oven 160°C

Quarter each peach, removing the stone, and place on a baking tray.

Brush the peaches with the St. Lawrence Gold maple syrup and place in the oven for 15-20 minutes or until golden brown and soft.

Slice the halloumi into 6-8 slices, not too thinly.

Preheat a pan on a medium heat and add a small amount of oil. Add the halloumi and let it go golden brown and turn them, colouring the smoke on the other side.

Take the peaches and halloumi, place them in a bowl with chopped up mint and a thinly sliced chilli (deseeded if you don’t want too much heat).
7.
Then drizzle the juices that have come from the peaches over the dish with an extra bit of St. Lawrence Gold maple syrup.
