Ingredients:
170g self-raising flour
170g butter
130g caster sugar
40ml St. Lawrence Gold maple syrup
3 eggs
1/2 tsp baking powder
2 ripe bananas

Preheat your oven to 160ºC | Gas Mark 3 | Fan Oven 140ºC

Line a loaf tin with parchment.

Cream the butter and sugar in a mixing bowl or an electric mixer and mix until pale and fluffy.

Mix one egg at a time into the creamed sugar and butter mixture, scrape down the sides of the bowl after each egg has been mixed in. Add small amounts of St. Lawrence Gold maple syrup in with each egg until it’s all mixed in.

Sieve small amounts of flour into the mixture at a time, folding the flour into the mix with a wooden spoon or a spatula (being careful not to over mix).

Pour the mixture into the loaf tin and spread evenly.
7.
Cook for about 30-35 minutes, or at around the time check with a skewer and if it’s clean, it’s cooked.
8.
Serve warm or cold.
