Cumberland sausage with cherries & maple syrup

A wonderful summer dish

An excellent way to enjoy British summer fruits and the great British sausage — together! The sweetness of the cherries and maple syrup are the perfect accompaniment to these savoury sausages. This recipe is also great to put into a hot dog roll.

Ingredients

Ingredients:

8 Cumberland sausages

1 tbsp olive oil

4 medium red onions, peeled and cut into 8 equal pieces

1 tsp salt

1/2 tsp cracked black pepper

200g British cherries

3 tbsp red wine vinegar

2 tbsp St. Lawrence Gold maple syrup

1 tsp fresh thyme, roughly chopped

1 tsp fresh rosemary, roughly chopped

Method

1.

Place the sausages, onions, oil, salt and pepper into a roasting tray and cook in a pre-heated oven for 15-20 minutes at 180°C | Gas Mark 4 | Fan Oven 160°C

Meanwhile cut the cherries in half and remove the stones.

3.

When the sausages are golden brown and the red onions are softened add the cherries, vinegar and St. Lawrence Gold Maple Syrup

Finally add the roughly chopped herbs and return to the oven for a further 10 minutes.
